Today we have a beautiful rain storm here and we are so happy for it. And since the trees still have their winter look, a warm dish for dinner is the plan. A few years back I started eating collard greens and I am liking them more and more. They are softer – both in taste and texture – than other green leafys so they need less cooking. Sure you can braise them long and they still taste wonderful but a quick steam works well.
